The climate around Lake Neusiedl is perfect for the wine varieties cultivated here. The Lake Neusiedl-Seewinkel National Park adds its own contribution to the production of world-class wines. The untouched nature, the long Pannonian sunny days as well as the temperature-insulating lakes guarantee top wines are produced in Illmitz year after year.

Mildly spicy with a light, fruity acidity is how the Weissburgunder and Welschriesling are described. The full-bodied reds, on the other hand, impress with opulent fruit, elegance and power. Zweigelt and Blaufrankisch are the predominant types.
Illmitz is internationally recognised for its dessert wines. The noble rot and the microclimate on the lake make an important contribution. However the it is the knowledge of the Illmitz wine-makers about dessert wines that ensure repeated international recognition.

Usually the word mould has negative associations. However in the world of wine, there is a special mould which makes white grape juice smell like spicy honey with a dash of cooked cabbage. The mould „Botrytis Cinerea“ is the cause of grape rot. Depending on the maturation stage, one differentiates between the feared grey rot form and the welcome noble rot form.
The climate plays an important role in the development of the noble rot. If continuous wet weather with warm temperatures and high humidity predominates in late summer and autumn, the mould grows quickly. If these conditions are followed by long periods of sunny weather, the Botrytis mould sucks water from the grapes and concentrates the must contents. We thank the noble rot for noble wines like Beerenauslese, Ausbruch wines und Trockenbeerenauslese.
Many events between the middle of April and the middle of November attract wine-lovers to Illmitz to taste the wines. The history, the culture and the quality of the wines are closely examined. A must for wine-lovers and other interested parties.
The first highlight is the “Spring walk in Illmitz”. In mid April, 29 wine-makers open their cellars and invite you to tastings. The many restaurants in the village will spoil you with their treats and titbits from the National Park area.
The presentation of the new wines at the “Illmitz new wine ramble” is another noteworthy highlight. (September)
The traditional Martiniloben which falls on the first and second November weekend every year, attracts more and more wine-lovers to Illmitz. This is another occasion where the wine-makers open their doors and invite you to taste wine and snacks. The traditional Martini goose and goose soup can be found on every menu.
The chefs of Illmitz reside in one of the most outstanding National Parks in central Europe. This connection to nature and an inclination towards regionally grown products is reflected in the choice of dishes on offer.

Vegetables are procured directly from the “vegetable patch of Austria” and ensure high quality, vitamin-rich fare.
Flocks of sheep and herds of Mangaliza pigs and Hungarian steppe cattle flourish on the local pastures - and their meat is used in local kitchens to create delicious meals. Depending on the season, the healthy population of game animals as well as fish from nearby Lake Neusiedl also fill the baskets of local chefs. They have a perfect understanding of how to use these local products with passion, wisdom and a knowledge of contemporary techniques.
